I have been watching this amazing development evolve for some time but never actually tried it for myself.

Now I don't feel so dumb for having spent all of yesterday looking for "Getting Started" and finding nothing

Question: How does one decide which ESP32 to purchase?

You can buy any chip of the ESP family but I suggest the classic ESP32 or the ESP32-S3

For about a tenner you could get an esp32-S3 N16R8 UNO clone, plus a plastic case for it, plus a proto-shield with removable breadboard.
It would offer a powerful Annex32 device with loads of memory and file space, with the convenience of a DC jack for powering from mains adapter or USB. The plastic case offers safe and stable operating convenience.
The plugin breadboard proto'shield' allows quick breadboarding of experiments, then eventual permanent soldering direct to the proto shield.
There are lots of other cheap UNO plugin 'shields' available, including many which work 'as-is'.
Eg: the joystick shield has a 5v (UNO) or 3v (ESP32) switch, offering an analog joystick plus many useful buttons (I've been using it for Annex Steppers).
